Appliance Specifications and Parts:

1. Gas burner, power of 6.5 – 21 KW
2. Legs, 3 pcs
3. 3-5 mm steel or stainless steel pan
4. Wind protection / appliance bearing construction
5. Fastening devices
6. Lid (only the cataplana-sets!)

Gas reducers: make sure that the gas cylinder and the gas reducer are compatible.

Ignition and use:
1.     Check that the gas cylinder is full.
2.     Check that the gas reducer is properly attached to the gas cylinder.
3.     Use a 30 mbar gas reducer with a gas flow rate of max 1 kg/h.
4.     Check that all joints are tightly secured.
5.     Make sure that the adjustment knobs are in position “OFF” and open the gas cylinder valve (if controller has ON-OFF switch).
6.     Open the gas burner tap(s). (see tap markings)
7.     Press the ignition button (except for the Basic series and models PRO-460/460 inox)
8.     If the burner(s) do not ignite, close the gas tap, allow the spilled gas to dissipate, try again in a few minutes.

Temperatures on the pan:

1. Gas taps fully open – When the pan is warm and the knobs are fully open, the pan surface temperature can reach over 300 C in the centre of the pan and over 200 C at the edges. This position is only used for instant heating. Do not use this position during normal cooking!
2. Gas taps half open – this position is used for medium and heavy loads.
3. Gas taps slightly open – used at low load.

Temperatures can vary greatly, depending on air temperature, wind and the amount of food on the pan.

Gas taps allow you to regulate the temperature as per your needs.

Initial commissioning: NB! Only for steel pans, not for stainless steel (inox) pans!
Before commissioning, the pan must be run in burning the industrial oils on the pan surface and forming a protective layer to prevent burning. Proceed as follows: light the burner at medium power, then pour a thin layer of cooking oil into the pan. Heat for 10-15 minutes, add oil if necessary, then let the pan cool. Clean the surface of the cooled pan from oil residues (also remove any loose surfaces). Repeat this procedure until most of the pan surface has become dark and the metal surface has become smooth. When heating, make sure that the temperature does not get too high, as this may cause the opposite effect, resulting in the protective layer burning. When burned with fatty substances, oil residues burn on the pan surface but a protective layer is formed at the edges after first cooking. NB! This burn-in operation is very important, without which food can leave an unpleasant taste and food may burn, getting stuck on the surface. Only for steel pans, not for stainless steel (inox) pans!

Maintenance:

Cleaning the steel pan – it is inadvisable to clean the steel pan with water; it will soak up the burnt-in protective layer on the pan and may cause rust. If this is the case, the initial commissioning procedure described above must be repeated. The surface of the pan is cleaned with coarse salt – after use and removal of food residue shake coarse salt into a hot pan (with a burner in operation), old fat is absorbed into the salt crystals. After salting, apply a thin layer of oil or grease to the pan – salt causes rust on contact with water and during storage in humid conditions. The pan should not be cleaned with detergents – it will leave the give the food an unpleasant taste. If a thick and uneven layer of dirt has accumulated on the pan, it can be removed with a metal or wooden spatula.

Cleaning the stainless steel (inox) pan – stainless steel pan can be washed with water, using a rag and soaked. Dishwashing detergent may be used as well, but in that case the pan must afterwards be rinsed thoroughly.

Cleaning the wind protection – During operation, residual food, grease, etc. accumulates on the outer side panel. To clean, use regular grease disintegrating agents, clean the surface with a damp cloth afterwards.

Cleaning the burner – Light dirt can be removed from the burner with a dry or slightly damp cloth. Once the small holes in the burner get clogged, they can be cleaned with a fine metal wire.

Instructions for dealing with potential errors:

Error name:  Cause:   How to act:
Gas lighter does not light – no spark.  Gas lighter battery is low.  Replace the lighter battery.
Gas lighter does not light – no spark.  If battery is full but there is still no spark, the electrodes may have shifted. Ask your dealer or manufacturer for instructions on how to set up the electrodes.
Gas lighter does not light – there is spark. Gas taps are not open. Check the gas taps.
Gas flame does not light up or goes out constantly.  Incorrect use, excessive wind or empty gas cylinder. Check “Ignition and operation” in the user manual. In case of excessive wind, look for a shaded place or use a tent to redirect the wind, etc. Check whether there is sufficient gas in the gas cylinder.
Gas flame is yellow.  Cylinder is starting to empty or dirt has entered the burner air valve. Check whether there is sufficient gas in the gas cylinder. Check the burner gas valves (located directly under the button cover), if necessary, remove dirt.
Pan is unstable on its feet.  Fixing bolts for legs have come loose.  Fasten the bolts.
Gas reducer is incompatible with the gas cylinder.  Incorrect installation or wrong reducer. Wrong gas burner.  Check if the reducer is correct for the device.
Read the user manual for the reducer.
Different types of gas hoses and fittings are used in Germany and Scandinavia.
Fire under the button box (in the burner air intake) Burner is running at a too low load, i.e. flame is too small. Put out the flame from the gas taps or reducer. Allow the appliance to cool down for 2-3 minutes and light it again. Do not use the gas burner at minimum load.
Steel pan has gone rusty while stored. Excessive moisture, storage in stuffy place. Remove larger rust with a steel brush, then repeat the initial commissioning procedure
